Petit Fours (also spelled as “Petits Fours” singular “Petit Four”) literally means “Small Oven”. Back in the day when brick ovens were used, French Pastry Chefs took advantage of the heat from cooling ovens during the end of their baking day by making small cakes. Petit Fours traditionally are 1-1.5 inches, small bite-sized pastries that can be eaten in 1-2 bites. Who is Mercedes Camacho-Peterson? Mercedes Camacho-Peterson is a Pastry Chef trained at the prestigious Tante Marie’s Cooking School in the Nob Hill District(Embarcadero), San Francisco. She graduated with a Certificate in Baking and Pastry Arts in March 2008. Afterwards she did an externship at Patisserie Philippe in the South of Market district of San Francisco and was mentored by French Pastry Chef Philippe Delarue. Prior to her burgeoning career as a Pastry Chef, she was an Operations Manager for the BPO industry. She changed careers because she wanted to pursue her passion for pastries which was cultivated when she was a child. Her inspiration was her dog-eared “Maya Kitchen Cakes and Pastries” cookbook. Her entire Culinary education was funded by her own life savings!
